Full Mash Recipes - based on 80% mash effeciency
Australian Queensland Ale
Batch size 22.5L
O.G 1.045

SRM 8
Ingredients
4 kg Pale malted grain
250 gms crystal grain15gms Pride of Ringwood hop cones 12.50% AAU (bittering)
15gms Pride of Ringwood hop cones 12.50%AAU (flavouring)
15gms Golden Cluster hop pellets 5% AAU (aroma)
7gm Irish Moss
1 Safale ale yeast or equivalent
Method
Crack grains and mash fo 90 minutes at 65oC
Recover sugars from mash/lauter tun and drain into boiler, sparge the grains at 74oC into boiler until correct quantities are achieved or until runnings are at < 1.006.
Once the wort is boiling add your first addition of Pride of Ringwood hops.
Forty five minutes into the boil add your second addition of Pride of Ringwood hops with the Irish moss. At the end of boil, cool wort down to 20oC and pour into fermenter, top up fermenter to the correct level if required, add yeast and Golden cluster hops, then stir vigorously.
Note: to make this recipe a gold style only use 3kgs pale malt
Outback Brown Kelpie Ale
Batch Size 22.5L

SRM 26.0
Ingredients
4kg pale malted grain
250gm Crystal grain
300gm Chocolate Malt
15 gms of Pride of Ringwood hop Cones 12.50% AAA (bittering)
7 gms Irish Moss
1 Safale yeast or equivalent
Method
Crack Grains and mash for 90 minutes at 66oC

Once the wort is boiling add all your hops and boil for 60 minutes. Forty five minutes into the boil add your irish moss. At the ned of the boil, cool wort down to 20oC and pour into fermenter, top up the fermenter to the correct level if required, add yeast , then stir vigorously

Club Pale Ale
This is the recipe brewed on our Club Brew Day in March 2009.
Batch Size 22.5L

Ingredients
3kg Light liquid malt extract
500gm Dextrose
25gms Goldings hop pellets 4.75AAU (flavour and bittering) 60 mins
15gms Pride of Ringwood hop cones 10.00AAU (bittering) 60 mins
10gms Pride of Ringwood hop cones 10.00AAU (aroma) 5 mins
Method
Half fill your brewpot with water and bring to the boil. Add 500g of the extract and all boiling hops for 1 hour.
Add the finishing hops and the rest of the fermentables and boil for a further five minutes.
Strain into your fermenter and ferment out as usual.
English Pale Ale
Batch Size 22.5L

Ingredients
3kg Light liquid malt extract
500gm Dextrose
25gms Goldings hop pellets 4.75AAU (flavour and bittering) 60 mins
15gms Pride of Ringwood hop cones 10.00AAU (bittering) 60 mins
10gms Pride of Ringwood hop cones 10.00AAU (aroma) 5 mins
Method
Half fill your brewpot with water and bring to the boil. Add 500g of the extract and all boiling hops for 1 hour.
Add the finishing hops and the rest of the fermentables and boil for a further five minutes.
Strain into your fermenter and ferment out as usual.
Brown Dog Ale
Batch Size 22.5
O.G 1.050
IBU 33.2
SRM 22.3
Ingredients
500gm Dark liquid Malt Extract
2.5kg Pale liquid Malt extract
250gms Crystal
500gms Dextrose
Half fill the brewpot with water. Put the crystal in a muslin bag and place in pot. Bring slowly to the boil and remove muslin bag just before boiling point.
Add 500gm of the extract and hops and bring to the boil. Boil for 30 minutes then add the rest of the extract and the cane sugar.
Boil for five minutes. Strain into the fermenter, top up with cold water and when temperature falls below 25oC, pitch the yeast.
